BBQ Chilli Lamb Cutlets

We’ve spent a number of years working with lamb suppliers who have worked to best practice for animal husbandry to produce an exceptional quality product. Our lamb is certified organic and is raised on a saltbush diet that they graze on free from antibiotics and growth hormones.

Summer is the perfect time to enjoy lamb on the barbeque, especially when using quick cook recipes like our BBQ Chilli Lamb Cutlets. In this recipe we’ve left the fat on the cutlets to impart more flavour into the meat while cooking, but if you’d prefer them to be a bit leaner just ask your butcher to French trim their ends.

 

Ingredients

Serves two

  • 6-8 cutlets
  • 2 tablespoons of chilli in oil
  • 1-2 table spoons of olive oil
  • Salt and pepper to taste

 

Method

  1. Preheat the barbeque until hot
  2. Place cutlets into a dish, add chilli, olive oil and salt and pepper. Coat cutlets all over and either set aside for 30 minutes to marinate or take straight to the BBQ. 
  3. Place cutlets on the grill and cook for 3-4 minutes on each side, remove from the grill and let it rest for a few minutes
  4. Serve cutlets with your favourite salad or blanched green beans and asparagus dressed with lemon, olive oil, salt and pepper as a quick zesty dressing.


* We use a chilli oil that has whole diced chillies marinating in olive oil (rather than chilli flakes) that you can buy from deli’s like Mediterranean Wholesalers (Brunswick) or good Asian grocers
