Russell and Tracey run a small-scale free-range chicken operation in Victoria's north-east. The chooks enjoy plenty of space and natural vegetation on the open pastures they roam around. Milawa Poultry produces just 1000 birds a week, which are judged “meaty with a gutsy flavour”, and are a favourite with chefs.
Don't be surprised to run into a Milawa Poultry stand at your local farmers' market – they're out and about selling their products directly most weekends.
