Butchery Classes

At Hagens we are now offering butchery classes. These are run from our Richmond Store every fortnight on Thursdays from 6pm until 9pm.

Be sure to view our bookings as places are limited and sell out fast. 

Please Note: Classes do require minimum numbers in order to go ahead. We reserve the right to move bookies and offer a refund in the event that postponement is not suitable. 

We currently offer the following butchery classes. 

- Beef Butchery Class (3 hours, Richmond, Monthly)

Our original and most popular class. This butchery short course covers general organic farming practice a quick overview of provenance, slaughter and storage. Our expert butchers then display how a side of beef is broken down into its primal cuts. Then as a class we pick up a knife and learn to prepare our own joint of beef.

Our Introduction to Butchery class covers firstly organic butchery practice, then we demonstrate how beef is broken down into its primal cuts, whilst at the same time explaining different uses for each cut of meat.

- Beef Butchery Class South Melbourne Market

Come and join us at our flagship store in the iconic South Melbourne Market.  This class follows the same format as our longstanding & popular Beef Butchery Class mentioned above. After the class we enjoy a meal provided by Proper & Sons - another Market favourite.

- Pork and Sausage Class Richmond  

As a class we then learn how a pig is broken down into its primary cuts. This is a very interesting part of the class where people enjoy learning where their favourite cuts come from, why they taste and cook the way they do. We will then cover how a sausage is made from the grinding of appropriate cuts, balancing fat & moisture contents, the seasoning of some the world's most famous snags to the delicate art of getting it into the casing!

All Classes

  • Limited numbers 
  • You will take home the meat that you butcher on the night, also we will provide you with a boning knife and butchers apron to keep.
  • At the end of the class there is a meal included matched with an appropriate beer or wine. 
Due to popular demand, we are now able to offer people butchery class vouchers, these make an excellent gift for Xmas, mothers day, fathers day etc! To purchase a voucher for someone, with 12 months to use until expiry there's no reason to worry about dates.
