A full-proof, simple but certainly not shy on flavour - our chorizo, spiced tomato and capsicum shakshuka. It's the perfect bowl of comfort to be consumed in bed.
Heat up pan and cook chorizo on medium heat for 5 minutes or until golden.
Add in spiced tomato and capsicum sauce and heat through over low heat. Make small divots and crack eggs into them.
Cook with lid on until eggs are cooked to your liking - around 8 mins. Top with crumbled feta and a drizzle of EVOO and serve in bed!
