Never fear non-pork eaters, we have a cured ‘ham’ for you this year. Made using a leg of lamb (rather than a leg of pork) we brine, cure and smoke the lamb in a similar fashion. We add truffle in to increase the mouth-watering richness. Serve warmed from the oven or sliced cold for your cold cuts Christmas spread.
