Skinless chicken breast fillet. Whole with the tenderloin. One chicken breast is typically 250grams, however they do vary in size depending on how big the chickens are that week.
Chicken breasts are very lean so are great for a faster cook.
They're also really nice poached in a veggie or chicken stock. If you add in some ginger, garlic and chilli it gives the breast a nice aromatic flavour which can then be added to a raw salad.
