South Melbourne Market - Hagen's Organic Butcher

Hagen’s Organics at the South Melbourne Market is Hagen’s fourth and most iconic store. Opened in 2016, Hagen’s brought in Melbourne-based design agency Projects of Imagination to design and fit out the store. Store accents feature floor to ceiling pink terrazzo tiles, polished zinc display-fridge’s and cow leather accents.

The store encourages customers to come inside, rather than have an over the counter exchange, where they can walk over and up to the standing fridges to engage with the butchers for knowledge, techniques and tips for cooking with meat. The store’s space to hold intimate events and butchery classes has been utilised to bring the customer up-close to the meat they eat through educational and informative sessions.

The store is managed by butchery expert (Tiny) Tim Hope-Hodgetts who brings 36 years of experience to the store. Tim’s wife Anastasia is knowledge and skilful in her front of house, along with their son Austyn, who works as a butcher’s apprentice, the family come together to carry on the family vibe in store.
