This quick and easy Teriyaki Beef & Rice Bowl is a 20-minute, family-friendly meal that’s perfect for busy parents looking for a healthy, balanced dinner. Ingredients
4 tbsp vegetable oil
1 brown onion, finely chopped
2 garlic cloves, minced
1 tsp fresh ginger, grated
2 small zucchinis, grated
2 tbsp soy sauce
2 tbsp mirin
1 tbsp sake
1 tbsp caster sugar
500g beef mince
Rice for serving
Carrot, cabbage, radish and spring onion for serving
Method
- Place a fry pan on medium heat and add in half of the oil. Once hot, add in the onion and cook for 5 minutes.
- Next, add in the zucchini, garlic and ginger and continue frying for another 5 minutes. Remove from pan.
- While that’s cooking, make the sauce by combining the soy sauce, mirin, sake and sugar in a bowl.
- Add in the remaining oil and turn the heat to medium-high. Once hot, add in the mince, breaking it up as it cooks.
- Once it is nicely caramelised, add the onion mixture back to the pan and combine.
- Pour the sauce over the meat and cook for another few minutes. Season with salt and plenty of black pepper.
- To assemble the bowls, add the rice, followed by the mince and then fresh vegetables.
