Our Certified Organic, Free-Range, Grass-Fed Eye Fillet, also known as the tenderloin and is one of the most prized cuts of beef, and for good reason. Incredibly lean, tender, and buttery-soft, it comes from a muscle that does very little work.

This cut is as versatile as it is elegant, perfect for roasting, grilling, or even poaching, and of course, the star of a classic Beef Wellington. However you prepare it, the Eye Fillet promises melt-in-your-mouth tenderness and subtle, refined flavour that shines on any special occasion.

Recipes / Cooking Instructions +

Preheat oven to 200c. Sear in a hot pan before putting into the oven.

Rare 55c – 60c: For every 500g cook for 20 – 25 minutes.

Medium 65c – 70: For every 500g cook for 25 – 30 minutes.

Well done 75c: For every 500g cook for 30 – 35 minutes.

Important to rest after cooking.
