A throw-together salad that requires minimal effort but looks like a dream on a festive tables-cape. It's the perfect combination of creaminess from the burrata, freshness from the tomato and sweetness from the peaches. A wonderful accompaniment to a roast chook or tender roast beef.
Ingredients
2 peaches, cut into thin wedges
1kg hierloom tomatoes, cut into slices
1 ball of burrata
1/2 bunch basil, roughly chopped
2 tbsp red wine vinegar
4 tbsp extra virgin olive oil
1 garlic clove, minced
salt
Method
Arrange the peaches and tomatoes on a large platter, piling them on top of each other.
Place the ball of burrata in the middle of the arrangement and scatter with the basil.
Combine the red wine vinegar, extra virgin olive oil and garlic and drizzle over the top of tomatoes and peaches and season with plenty of salt and freshly cracked pepper.
