A throw-together salad that requires minimal effort but looks like a dream on a festive tables-cape. It's the perfect combination of creaminess from the burrata, freshness from the tomato and sweetness from the peaches. A wonderful accompaniment to a roast chook or tender roast beef.
Ingredients
- 2 peaches, cut into thin wedges
- 1kg hierloom tomatoes, cut into slices
- 1 ball of burrata
- 1/2 bunch basil, roughly chopped
- 2 tbsp red wine vinegar
- 4 tbsp extra virgin olive oil
- 1 garlic clove, minced
- salt
Method
- Arrange the peaches and tomatoes on a large platter, piling them on top of each other.
- Place the ball of burrata in the middle of the arrangement and scatter with the basil.
- Combine the red wine vinegar, extra virgin olive oil and garlic and drizzle over the top of tomatoes and peaches and season with plenty of salt and freshly cracked pepper.
