In celebration of International Bacon Day, we present to you, our Streaky Bacon Mac and Cheese! Creamy, savoury and with the perfect amount of tang, this is one dreamy side to pair with smoked brisket, grilled steak or a classic roast chook on Sunday night.
400g macaroni pasta
200g streaky bacon, diced
1 small onion, diced
1 garlic clove, finely chopped 500ml thickened cream
1 tsp smoked paprika
150g gruyere, grated
cheddar, grated 80g
parmesan, grated 1/2C homemade breadcrumbs or panko crumbs
Preheat oven to 180 degrees.
Bring a pot of salted water to the boil and once boiling, add in the pasta. Cook until almost al dente.
In a large saucepan, heat 1 tbsp oil and add in the bacon. Cook until caramelised and drain on paper towel. Add in the onion and garlic and saute on low heat for 5 mins, until cooked but not coloured.
Add in the cream and bring to a boil and then reduce to a simmer.
Add in the dijon, paprika, gruyere, cheddar and half the parmesan and stir through until thickened - around 5 mins.
Stir through the pasta and pour into an oven-proof dish.
Stir the remaining parmesan through the breadcrumbs and then stir through oil.
Sprinkle on top of pasta and place in the oven for 15 mins or until caramelised. Place under grill if it needs a little more colour, but watch it carefully.
