Our House-Made Beef Wellington, a perfect centerpiece for a special occasion. It is made with our Organic Eye Fillet from Clayton's Organics and wrapped in mushroom duxelles. Pair it with potatoes and Brussels sprouts for a tasty meal.
Ingredients:
1 Beef Wellington
1 Organic Egg
Cooking Instructions:
- Preheat Oven to 220 degrees Celsius.
- Place the pan you are going to be using into the oven as it is preheating. This is to ensure a crisp bottom on your beef Wellington.
- While the oven is heating, beat the egg to create an egg wash.
- Once the oven is preheated, pull the baking pan out and place a sheet of baking paper onto the tray.
- Place the beef Wellington onto the tray and brush your egg wash over the top.
- Turn the heat down to 200 degrees Celsius and place the beef Wellington in the oven.
- Cook for 15 minutes, then pull the beef Wellington out of the oven and brush another layer of egg wash over it.
- Place back into the oven for another 15 to 20 minutes or until golden brown.
Center Temperatures
52-56°C for rare.
57-59°C for medium
60-63°C for well done
