Ingredients:
1 Beef Shin
Olive Oil
2 Carrots, finely diced
1 Shallot, finely diced
1 Brown Onion, finely diced
150g Streaky Bacon, finely diced
4-5 Sprigs of Thyme
1-2 Sprigs of Herb for tying onto roast (sage, rosemary, or thyme)
1 can of Beer, we used heaps normal
1 jar of Hagen's Organic Beef Stock
Salt & Pepper
Method:
Preheat the oven to 160°C or 170°C. The lower the temperature the longer you will need to cook it.
In a large casserole pot on the stove, heat some olive oil and lightly fry onion, shallot, carrots, and streaky bacon for 5 minutes, or until soft. Season with salt and pepper.
Season the beef shin with salt and pepper. Place one-third of the carrot, onion, and bacon mixture on top of the meat. Roll the beef roast and tie it with kitchen twine. Optionally, tie a herb (sage, rosemary, or thyme) on top of the roast.
Heat a pan on the stove, drizzle some olive oil, and sear all sides of the beef roast. Transfer the seared beef roast to the large casserole pot, placing it on top of the remaining onion, carrot, and bacon mixture.
Pour the organic beef stock into the pan used for searing, and heat until it becomes liquid. Pour the heated stock into the large casserole pot with the meat, followed by one can of beer. The roast should be mostly covered with liquid; if needed, add more stock, beer, or water.
Place the thyme sprigs on top of the roast, and cover the pot with a lid. Put the pot in the preheated oven and cook for 4 to 5 hours, depending on the oven temperature. Check the roast periodically and add more liquid if necessary.
Once cooked, remove the pot from the oven and let the roast rest for 15 minutes.
Slice the roast and serve with green beans or your choice of vegetables.
