Berkshire Pork, Apple and Fennel Sausage Rolls

Where should you go when you need a delicious pork sausage roll recipe? Straight to your pork producers - McIvor Farm Foods.

We love this recipe for sausage rolls because it's well balanced with the sweetness of the apple bringing out the flavour of the Berkshire pork and a cut through of the fennel seeds.

INGREDIENTS

1 small brown onion, finely chopped

1 clove of garlic, finely chopped

500g  McIvor Farm Berkshire Pork Mince

2tsp fennel seeds

2 small apples, cored and grated

Salt and pepper to taste

3 sheets frozen puff pastry (cold, not frozen)

1 eggs, whisked

Poppy seeds

METHOD

Pre-heat oven to 180C

Combine all ingredients except for the egg, pastry and poppy seeds. Mix through well until all ingredients are combined.

Slice the pastry sheet into thirds. Brush the longest edge of each third with the egg. Spoon on the pork mixture to make a long sausage about 1 cm from the side of the strip. Roll the pastry over the pork mixture tightly to enclose the mixture. Slice into thirds along the length of the sausage roll.

Place on a baking sheet, brush the tops with egg and sprinkle with the sesame seeds. Bake in the oven for 20 minutes until golden brown and puffy.

Serve with your favourite chutney or tommo sauce.
