Cajun Beef Skewers with Tomato Pineapple Salsa

Our Cajun Beef Skewers have had all of the hard work done for you, so all that’s left to do is throw them on the BBQ and prepare a quick salsa. Tomatoes are in their prime at the moment, so we’ve made the most of it by pairing them with some juicy pineapple, red onion and coriander. The sweet and tangy salsa is a perfect accompaniment to the spiced, tender beef skewers. A super simple, flavour-packed dinner to celebrate the end of summer!

Ingredients

Cajun beef skewers

¼ pineapple, cut into 1cm pieces

250g cherry tomatoes, cut into 1cm pieces

¼ red onion, finely diced

3 tbsp coriander, roughly chopped

½ lemon

2 ½ tbsp olive oil

½ C Greek yoghurt

1 small garlic clove, minced

1 tsp mint, finely chopped

2 flatbreads


Method


  1. Take the skewers out of the fridge to allow them to come up to room temperature.
  2. Start by making the salsa by combining the pineapple, tomatoes, red onion and coriander. 
  3. Drizzle with ½ tbsp olive oil, lemon juice and season with salt and pepper.
  4. Next, make the yoghurt dressing by combining the yoghurt, garlic and mint and season with salt and pepper.
  5. Turn on the BBQ to high heat and once hot, add your flatbread, cooking until lightly charred. Remove and set aside.
  6. Drizzle skewers with remaining 2 tbsp olive oil and place on the hot grill. 
  7. Cook until nicely caramelised on each side - around 4 mins each side depending on the temperature of your BBQ.
  8. Serve skewers with flatbread, tomato and pineapple salsa and drizzle with minted yoghurt dressing.
