A midweek dinner that’s crisp, crunchy, and comforting. Hagen’s house-made chicken schnitzels fry up golden in minutes - just add this wintery salad of rocket, pear, and walnuts for freshness and bite.
Hagen’s Chicken Schnitzels
Olive oil or tallow, for shallow frying
1 ripe pear, thinly sliced
2 big handfuls rocket
1⁄4 cup walnuts, toasted and roughly chopped
1⁄4 cup parmesan, finely grated
2 tbsp extra virgin olive oil
Salt and freshly cracked black pepper
Chives, finely chopped, to garnish
Heat a large frypan over medium-high heat and add enough oil to cover the base.
Once hot, fry the schnitzels for 3 - 4 minutes on each side until golden and cooked through. Rest on paper towel.
While the schnitzels cook, toss rocket, pear, walnuts and parmesan in a bowl. Drizzle with olive oil, season with salt and pepper, and toss gently to combine.
Serve schnitzels hot with salad piled alongside and a generous scattering of chives on top.
