Freezer Chicken Fajita Mix

This is the first recipe of our freezer series, including ideas that are absolute life savers mid week! A spare hour on a Sunday can bless you with dinner options that just need to be cooked on a stove top or oven and there you have it, dinner on the table with almost zero effort. This Chicken Fajita recipe is lightly spiced, full of flavour and full of colourful veg too. Serve it on rice with beans, in tortillas or even baked enchiladas, the options are endless.



Serves 4-6


Ingredients


1 tbsp ground cumin

1 tbsp ground coriander

1 tbsp smoked paprika

1 tbsp dried oregano

4 cloves garlic, minced

1 tbsp olive oil

½ tbsp salt

Freshly cracked pepper

1kg chicken breast or thigh, sliced into strips

1 red onion, sliced into strips

1 red capsicum, sliced into strips

1 green capsicum, sliced into strips

1 yellow capsicum, sliced into strips


Method


  1. In a large bowl, combine the ground spices with the garlic, olive oil, salt and pepper.
  2. Add in the sliced chicken and combine ensuring the chicken is evenly coated.
  3. Next, add in the capsicum and onion and stir to combine.
  4. In a large ziplock bag, add in the mix, seal and flatten. Ensure that there is no air left in the bag.
  5. Write the name and date on the bag and freeze.
  6. Remove the mix from the freezer the morning you’re wanting to cook it and place it in the fridge to defrost.
  7. Preheat the oven to 220 degrees celsius.
  8. Lay chicken mix out on a baking tray and place in a preheated oven for 30 minutes or until the chicken is golden and cooked through.
  9. Serve on tortillas or rice with guacamole and fresh salsa.
