A super simple weeknight dinner we cook on repeat. Our Ora King Salmon has a flavour unlike any other, which means you don't need to fuss about to make it taste delicious. This recipe can be made with whatever vegetables you have in your fridge or pantry and within an hour, you've got yourself a tasty and healthy dinner on the table.
Toss potatoes and brussel sprouts in olive oil with 2 crushed garlic cloves, paprika and salt and pepper. Place in oven for 30 minutes until golden.
After 20 minutes of your veg cooking, marinate the salmon.
In a bowl mix 2 tbsp olive oil, lemon juice, herbs, a garlic clove that's been finely chopped and salt and pepper. Add the salmon into the bowl and coat.
Place marinated salmon fillets in the pan and the remaining marinade, along with the butter and place it back in the oven for 7-10 minutes or until the salmon is cooked to your liking. To get the salmon and veg golden, change the setting to grill for the last 3-4 minutes.
These yoghurty, herby spiced lamb chops will work with whatever herbs you have on hand and are exactly the kind of food you'll want to be eating as we head into the warmer months. Not that you'll have any leftovers, but if you do, they're a great addition to a leafy salad for lunch the next day, particularly when we're WFH. Grilled on the barby or pan fried, they won't fall short of providing a satisfying dinner for the whole fam.
Musakhan is a traditional Palestinian chicken meal that's served from one dish, for everyone to tear of bread and sandwich the tender, spiced chicken and onions in between. With the mild weather we've been blessed with, we cooked the chicken on the barby to give the whole dish a nice, toasty flavour but cooking it in the oven will works wonderfully too!
