- Pull back the skin
- Lightly score the white fat in a criss-cross pattern
- ‘Stud’ the entire ham with cloves in the middle of the X where the criss-crosses meet
- Place the ham in a baking dish and use a pastry brush to cover it in your preferred glaze
- Bake at about 180C for around 20 minutes, or until the ham begins to brown
- Do a second coat of the glaze, return it to the oven and continue to bake until browned all over
- Enjoy!
Remember that the ham has already been ‘cooked’ during the smoking process, and only needs to be baked until the glaze on top is golden — too much oven time will dry it out!
