The sun is shining and working from home has become a whole lot more enjoyable, but if you’re really looking at taking it to another level, we’ve got just the thing for you! It’s our mortadella sandwich recipe, with a giardiniera studded mayo, provolone, pickles, red onion and some crunchy shredded lettuce. Trust us, it tastes as good as it looks!

Ingredients:
- 1C giardiniera / table pickles
- 1/2C whole egg mayonnaise
- 1 tsp dijon mustard
- 1 tsp horseradish cream
- splash pickle juice
- 200g mortadella
- provolone, sliced
- pickles, sliced
- red onion, thinly sliced
- shredded lettuce
- bread rolls
- butter
- extra virgin olive oil
Method:
- Roughly chop the table pickles and add into mayonnaise, horseradish, mustard and pickle juice and stir thoroughly.
- Cut the rolls in half and spread with butter.
- Then follow with the mayo/pickle mix and spread on the bottom of the roll.
- Layer with mortadella.
- Follow with provolone.
- Then add pickles and red onion.
- Season with salt and pepper and then top with lettuce.
- Drizzle with a little olive oil.
- Cut in half and enjoy!
