Mortadella Sando!

The sun is shining and working from home has become a whole lot more enjoyable, but if you’re really looking at taking it to another level, we’ve got just the thing for you! It’s our mortadella sandwich recipe, with a giardiniera studded mayo, provolone, pickles, red onion and some crunchy shredded lettuce. Trust us, it tastes as good as it looks!

serves 2


  • 1C giardiniera / table pickles
  • 1/2C whole egg mayonnaise
  • 1 tsp dijon mustard
  • 1 tsp horseradish cream
  • splash pickle juice
  • 200g mortadella
  • provolone, sliced
  • pickles, sliced
  • red onion, thinly sliced
  • shredded lettuce
  • bread rolls
  • butter
  • extra virgin olive oil


  1. Roughly chop the table pickles and add into mayonnaise, horseradish, mustard and pickle juice and stir thoroughly.
  2. Cut the rolls in half and spread with butter.
  3. Then follow with the mayo/pickle mix and spread on the bottom of the roll.
  4. Layer with mortadella.
  5. Follow with provolone.
  6. Then add pickles and red onion.
  7. Season with salt and pepper and then top with lettuce.
  8. Drizzle with a little olive oil.
  9. Cut in half and enjoy!

Musakhan is a traditional Palestinian chicken meal that's served from one dish, for everyone to tear of bread and sandwich the tender, spiced chicken and onions in between.
