Ingredients
1 Organic Chicken, butterflied and back bone removed 1 tablespoon of Italian Herbs 1 tablespoon of Smoked Paprika 1/2 tablespoon of onion powder 4 tablespoons of olive oil Salt Garlic cloves (optional)
Method
Preheat your oven to 180 degrees celsius.
Butterfly your chicken and remove the back bone or ask the butcher to do this for you in-store.
Pat dry the chicken, this will ensure a nice crispy skin
Place the chicken on a baking tray or cast iron pan
Mix all the spices together with olive oil and rub the spice blend all over the chicken.
Place garlic into the roasting pan surrounding the chicken
Roast at 180 deg for 45 minutes or until the meat thermometer reads 74 degrees celsius
Carve the roast chicken, and serve with veg and salad of your choice
