Ingredients
1 Organic Chicken, butterflied and back bone removed
1 tablespoon of Italian Herbs
1 tablespoon of Smoked Paprika
1/2 tablespoon of onion powder
4 tablespoons of olive oil
Salt
Garlic cloves (optional)
Method
- Preheat your oven to 180 degrees celsius.
- Butterfly your chicken and remove the back bone or ask the butcher to do this for you in-store.
- Pat dry the chicken, this will ensure a nice crispy skin
- Place the chicken on a baking tray or cast iron pan
- Mix all the spices together with olive oil and rub the spice blend all over the chicken.
- Place garlic into the roasting pan surrounding the chicken
- Roast at 180 deg for 45 minutes or until the meat thermometer reads 74 degrees celsius
- Carve the roast chicken, and serve with veg and salad of your choice
