Berkshire Pork Boneless Shoulder Roast

I slow cooked the roast for 6 hours on Christmas Eve. On Christmas Day I warmed it through gently in the oven, and then popped the skin off and roasted on high heat to make it crackle. The roast made Christmas lunch magnificent. Even my Croatian sister in law said it was the best pork she'd ever had - and the Croatians know how to cook pork!

The next day we had the leftovers as pulled pork burritos with slaw which was equally delicious.

Bought this for Xmas roast lunch - came in at an appreciated 2.125kg. I'd never cooked Berkshire pork before and it was as flavoursome and tender as suggested. It had a thorough wrapping of skin at good thickness and it was all very neatly trimmed and strung so maintained integrity during cooking. It was not too damp when extracted from shrink-wrapping, so the drying prep was a straight forward affair. Good distribution of some internal fat helped with cook too. The steeper pricing is obviously driven by the organic farming approach, but you got the extra value in all these important details which make a difference to a special meal. Cheers, Stephen
