Best Pork roast I've ever cooked and eaten. Sublime.
I slow cooked the roast for 6 hours on Christmas Eve. On Christmas Day I warmed it through gently in the oven, and then popped the skin off and roasted on high heat to make it crackle. The roast made Christmas lunch magnificent. Even my Croatian sister in law said it was the best pork she'd ever had - and the Croatians know how to cook pork!
The next day we had the leftovers as pulled pork burritos with slaw which was equally delicious.
