Autumn Recipes - Beijing Pork Noodles "Chinese Bolognese"

A one dish kind of meal, that is nothing short of delicious! Coming together in under twenty minutes, it's healthy, flavoursome and allows you to use whatever veg you might have lying in your fridge. Perfect for those busy weeknights, providing a comforting meal for the entire fam. With our pork mince coming it at $12, it's also a budget friendly meal, so yes you better add this recipe to your regular routine!

Ingredients

  • 100ml neutral olive oil
  • 500g pork mince
  • 5 spring onions, sliced
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 3 tbsp brown bean sauce - we use Pun Chun brand
  • 1 tbsp hoisin sauce
  • 1 tbsp shaoxing wine
  • 1 tbsp tamari
  • 400ml chicken stock
  • 600g noodles
  • Asian greens
  • Sesame seeds

Method

  1. Heat oil in wok and once heated, add in the pork mince. Cook until nicely caramelised, breaking it up as you go. Let it sit without stirring to allow for browning and crispiness, then scrape off the caramelised bits of pork from the bottom. 
  2. Add the white part of the spring onions into the wok, along with the ginger and garlic. Stir fry for another 5 minutes on medium-low heat.
  3. Stir bean sauce, hoisin, shaoxing, tamari and chicken stock in a bowl and add to the pork.
  4. Cook until the sauce has reduced, around 5 mins. Check for seasoning but it should have enough from the sauces. 
  5. Meanwhile, cook the noodles according to their packet instructions.
  6. Serve by spooning pork over the top of the noodles, with wilted greens on the side, greens parts of spring onions, cucumber and sesame seeds.
