Natoora was founded by Franco Fubini in 2004 in a bid to restore flavour, transparency and seasonality to a broken food system. In 2022, Franco and Kim Driver joined forces to bring Natoora to Melbourne, connecting restaurants and home chefs with Australia’s most flavour-led growers.
Featured Peak Box Grower - Maurie, Maria and Brian of Cafresco Organics, Cardinia, Victoria
Located in Victoria’s Koo Wee Rup region, Cafresco Organics have been farming with a focus on flavour and soil health for over 50 years. An obsession to farm like their parents used to, without the use of chemicals or synthetic additives, lead Maurie and Maria to obtaining an Australian Organic Certification in 2000. From then on, Cafresco Organics has been a leader in sustainable farming for the region.
Koo Wee Rup is renown for its peaty black vertosol soils. This soil does it all, retains water, allows for proper drainage and is fertile - supercharged with century old minerals and nutrients. However, there are many conventionally grown farms in this region, which have become dusty and lifeless. The work that Cafresco Organics has put in over the years, farming 20 acres organically, has resulted in thriving crops, that are equally delicious and resilient.
In the September Peak Box expect Maurie and Maria’s Purple Sprouting Broccoli and Imperial Star Globe Artichokes. Both will have a striking freshness and contrast to the woody, intensively-grown veggies that you'd normally find in supermarkets.
