The tenderloin is one of the most highly prized of any beef roast. It is incredibly lean and tender. This is because the muscle is rarely used and as we butchers say it's just along for the ride.

The tenderloin lends itself to a wide range of preparations which include roasting, grilling, even poaching, as well as the traditional Beef Wellington.

Recipes / Cooking Instructions +

Preheat oven to 200c. Sear in a hot pan before putting into the oven.

Rare 55c – 60c: For every 500g cook for 20 – 25 minutes.

Medium 65c – 70: For every 500g cook for 25 – 30 minutes.

Well done 75c: For every 500g cook for 30 – 35 minutes.

Important to rest after cooking.
