A worthwhile option

The only farmed salmon worthy of consideration. Very delicate texture with complex flavouring. Wild-caught is another option, but availability can be a problem.

Perfect Cured

I cured a few fillets of this beautiful fish and it was fantastic. I'm not buying any more farmed salmon from elsewhere. Also looking for wild salmon but its hard to find, this is an excellent alternative.
