Sourced from Bultarra Saltbush Lamb, our certified organic cutlets are carefully trimmed by our butchers — fat cap removed, cleaned up, and ready to cook. The fat that remains is there for good reason. It renders down during cooking, enhancing the flavour of the meat and crisping up beautifully for a finish that's hard to beat.
