Hamburgers with Radicchio, peach, and feta summer salad
Radicchio, peach and feta summer salad.
- 1 head radicchio, leaves torn
- 1 bunch rocket
- 3 peaches, sliced into wedges
- 1 cup crumbled Greek feta
- drizzle of olive oil
- 1 1/2 tablespoons white wine vinegar
- 1 clove garlic, minced
Get your grill nice and hot. Lightly oil peaches and place on the grill for 1 minute either side.
In bowl, toss radicchio, rocket, grilled peaches and feta. In small bowl, whisk remaining salad ingredients and season with salt and pepper to taste. Pour dressing over salad and toss.
Place the burgers onto the grill and cook either side for 3-5 minutes. Serve. We grilled some Turkish bread too, layering each side of the bun with our favourites condiments like Kewpie mayonnaise, Yardmill’s tomato ketchup and hummus.
