Few cuts command a table like a whole eye fillet. Cut from the tenderloin, it's the leanest and most tender roasting cut you can buy — delicate in texture, refined in flavour, and incredibly versatile in the kitchen.

Roast it whole for a stunning centrepiece, wrap it in pastry for a classic Beef Wellington, or slice it into steaks for the grill. However you cook it, the result is melt-in-your-mouth tenderness that needs little more than good seasoning and careful cooking.
