Organic Pineapple Ham Glaze

The glaze, so you’re not improvising on the day. Made in house at our Richmond kitchen by experienced chefs. Pineapple over a base of apple juice, infused with lemon peel, black tea, cinnamon, star anise and bay, then finished with crushed native pepperberry and turmeric. Sweet, but with enough acid and spice behind it to hold its own against the ham.

How many jars do you need
We would recommend two jars if you are buying a whole ham, and one jar for anything less. 

How to use it
score the fat, stud it if you like, brush the glaze on and into a hot oven around 220°C. Baste every 15 minutes or so until it’s golden.
