Organic Lamb Rack

The lamb rack is one of the most impressive cuts you can put on the table. Cut from the first seven ribs along the backbone, it's beautifully tender, refined in flavour, and surprisingly simple to cook well.

Roast it simply or finish it on the grill — the quality of the meat does the work. Serve it medium-rare, rest it well, and carve between the bones for a presentation that looks as good as it tastes. Paired with a Shiraz jus, it's a restaurant-quality result at home.
